Easter Cookies

I’ve been wanting to try decorating cookies with royal icing for quite some time now. So when my friend told me that she’s hosting a Spring get-together, I thought it’d be the perfect opportunity to make some sugar cookies and decorate them. Think of all the fun pastel colors! There are so many great tutorials out there for royal icing. I used this tutorial for both the sugar cookies and icing. Decorating took a bit of time and effort, but here are a few suggestions to hopefully make things easier:
1. Bake the cookies the day before. This would allow the cookies to completely cool, and not melt the icing.
2. Use squeeze bottles to decorate, instead of pastry bags. Sur La Table sells a basic set of 4 bottles.
3. Let the icing completely harden before packaging.
